  • 2 lbs sweet potatoes, peeled and thinly sliced
  • 1 cup heavy cream
  • 1 cup sharp cheddar cheese, shredded
  • 1 tsp garlic powder
  • 3 tbsp unsalted butter, melted
  • 1/2 tsp nutmeg
  • 1 cup panko breadcrumbs
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a greased baking dish, layer half of the sweet potato slices. Season with salt and pepper.
  3. Pour half of the heavy cream over the potatoes and sprinkle with half of the cheddar cheese. Repeat layers with remaining ingredients.
  4. In a bowl, combine panko breadcrumbs and melted butter; mix until coated. Top the dish.
  5. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15–20 minutes until golden brown.
  6. Let rest for 10 minutes before serving.
