  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 medium carrots, diced
  • 2 celery stalks, chopped
  • 1 medium yellow onion, diced
  • 4 garlic cloves, minced
  • 6 cups chicken broth
  • 2 cups dumpling mix (or homemade: 1 cup flour, 1 tsp baking powder, ½ cup milk, 2 tbsp butter)
  • 2 tsp fresh thyme, chopped
  • 2 tbsp fresh parsley, chopped
  • Salt & pepper to taste
  • 1 tbsp olive oil or butter

Instructions

  1. Heat olive oil or butter in a large pot over medium heat. Sauté onions until translucent (about 5 minutes), then add minced garlic.
  2. Stir in diced carrots and celery; cook until tender (about another 5 minutes). Add chicken breasts and season with salt and pepper.
  3. Pour in chicken broth to cover all ingredients. Bring to a gentle boil.
  4. Reduce heat to low, cover the pot, and simmer for about 20-25 minutes until chicken is cooked through.
  5. For the dumplings, combine flour, baking powder, salt, milk, and melted butter in a separate bowl until just mixed.
  6. Drop spoonfuls of the dumpling mixture into the simmering broth. Cover and steam for about 15 minutes without lifting the lid.
  7. Stir in fresh herbs before serving hot.
