Instructions
- Chop garlic, ginger, carrots, and bell pepper into bite-sized pieces.
- In a large pot over medium heat, sauté garlic and ginger in oil for 1-2 minutes until fragrant.
- Add chicken breasts and cook for about 5-7 minutes until no longer pink.
- Stir in chopped carrots, bell peppers, and turmeric powder; cook for another 2 minutes.
- Pour in coconut milk and chicken broth; bring to a simmer for 15-20 minutes until chicken is cooked through.
- Remove chicken, shred it with two forks, return to the pot along with lime juice, and stir well.
