  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 2 inches fresh ginger (sliced)
  • 4 garlic cloves (minced)
  • 1 can (13.5 oz) full-fat coconut milk
  • 4 cups chicken broth
  • 2 tsp turmeric powder
  • Juice of 1 lime
  • 1/4 cup fresh cilantro (for garnish)
  • 2 medium carrots (chopped)
  • 1 bell pepper (chopped)

Instructions

  1. Chop garlic, ginger, carrots, and bell pepper into bite-sized pieces.
  2. In a large pot over medium heat, sauté garlic and ginger in oil for 1-2 minutes until fragrant.
  3. Add chicken breasts and cook for about 5-7 minutes until no longer pink.
  4. Stir in chopped carrots, bell peppers, and turmeric powder; cook for another 2 minutes.
  5. Pour in coconut milk and chicken broth; bring to a simmer for 15-20 minutes until chicken is cooked through.
  6. Remove chicken, shred it with two forks, return to the pot along with lime juice, and stir well.
  7. Serve hot, garnished with fresh cilantro.
