  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 9 oz cheese tortellini (fresh or frozen)
  • 4 cups low-sodium chicken broth
  • 2 cups fresh spinach
  • 2 medium carrots, sliced thinly
  • 3 garlic cloves, minced
  • 2 tsp Italian seasoning
  • 1 cup grated Parmesan cheese (for serving)
  • Salt and pepper to taste

Instructions

  1. Dice the chicken into bite-sized pieces, slice the carrots thinly, and mince the garlic.
  2. Layer chicken in the bottom of the crockpot; add carrots, garlic, and Italian seasoning on top.
  3. Pour chicken broth over the layers; add fresh spinach.
  4. Cook on low for 6-7 hours or high for 3-4 hours.
  5. Stir in tortellini during the last 20 minutes of cooking until tender; adjust seasoning with salt and pepper.
