  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 1 cup salsa verde
  • 1 cup long-grain rice (jasmine or basmati)
  • 6 cups low-sodium chicken broth
  • 1/2 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped (red or green)
  • 2 tsp cumin
  • 1 tsp chili powder
  • 2 tbsp olive oil

Instructions

  1. Prep your ingredients by chopping the onion, garlic, bell pepper, and cilantro.
  2. In a large pot over medium heat, heat olive oil and sauté onions and garlic until translucent (about 3 minutes).
  3. Add chicken breasts along with cumin and chili powder; cook until chicken is no longer pink.
  4. Pour in chicken broth and salsa verde; bring to a boil then reduce heat to simmer for about 20 minutes.
  5. Stir in rice; continue to simmer for another 15-20 minutes until rice is cooked.
  6. Remove from heat; stir in lime juice and cilantro before serving hot.
