  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 can (15 oz) sweet corn, drained
  • 1 cup heavy cream
  • 1 medium onion, chopped
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1 tbsp butter

Instructions

  1. In a skillet over medium heat, melt butter and sauté chopped onion until translucent. Add minced garlic and cook for an additional minute.
  2. Transfer sautéed onions and garlic to the slow cooker. Add chicken breasts and pour in chicken broth. Season with salt, pepper, and thyme.
  3. Cook on low for 6-8 hours or high for 3-4 hours until chicken is tender.
  4. Remove chicken, shred it, and return it to the slow cooker along with drained corn and heavy cream.
  5. Simmer on low for another 30 minutes to allow flavors to meld before serving.
