  • 4 boneless, skinless chicken breasts
  • 4 cups low-sodium chicken broth

  • 1 medium onion, diced

  • 2 tsp fresh thyme (or 1 tsp dried)
  • 2 tsp fresh parsley (or 1 tsp dried)
  • Salt and pepper to taste

Instructions

  1. Prepare the chicken and vegetables by chopping the carrots, onion, and celery into bite-sized pieces.
  2. Place the chopped vegetables in the bottom of the crockpot. Layer the chicken breasts on top.

  4. Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is tender.
  5. About 30 minutes before serving, prepare the dumpling batter according to package instructions. Drop spoonfuls into the bubbling stew.
