  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 2 cups carrots, diced
  • 2 cups celery, chopped
  • 1 onion, diced
  • 1 cup long-grain white rice
  • 6 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • ½ cup cream (optional)

Instructions

  1. Prepare your ingredients by chopping the vegetables and dicing the garlic.
  2. Place chicken breasts in the bottom of the crockpot, followed by carrots, celery, onion, and garlic.
  3. Pour chicken broth over the mixture until all ingredients are submerged.
  4. Sprinkle thyme and parsley on top.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. About 30 minutes before serving, stir in the rice to cook until tender.
