- 2 stalks celery, diced
- 1 yellow onion, chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 4 cups low-sodium vegetable broth
- 2 tsp ground cumin
- 1 tsp smoked paprika
- 2 cups kale or spinach, roughly chopped
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- Prepare your veggies by washing and chopping them into bite-sized pieces.
- In a pan over medium heat, sauté the chopped onion and minced garlic until fragrant and translucent.
- Add diced carrots and celery; cook for about 5 minutes until softened.
- Combine all sautéed vegetables in the crockpot with chickpeas, diced tomatoes, vegetable broth, cumin, paprika, salt, and pepper.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Stir in kale or spinach during the last 10 minutes of cooking. Serve hot with fresh lemon juice squeezed on top.
