  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups low-sodium vegetable broth
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • 2 cups kale or spinach, roughly chopped
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Prepare your veggies by washing and chopping them into bite-sized pieces.
  2. In a pan over medium heat, sauté the chopped onion and minced garlic until fragrant and translucent.
  3. Add diced carrots and celery; cook for about 5 minutes until softened.
  4. Combine all sautéed vegetables in the crockpot with chickpeas, diced tomatoes, vegetable broth, cumin, paprika, salt, and pepper.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Stir in kale or spinach during the last 10 minutes of cooking. Serve hot with fresh lemon juice squeezed on top.
