  • 2 medium sweet potatoes (about 1 lb), peeled and cubed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 2 cups low-sodium vegetable broth
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • 1 bell pepper (any color), diced
  • Juice of 1 lime

Instructions

  1. Prep your veggies: Peel and cube the sweet potatoes. Dice the onion and bell pepper.
  2. Sauté aromatics: In a large pot over medium heat, sauté the onion in olive oil until translucent. Add minced garlic and cook until fragrant (about 30 seconds).
  3. Add sweet potatoes & spices: Stir in sweet potato cubes along with cumin and chili powder; cook until fragrant.
  4. Pour in liquids & beans: Add diced tomatoes with juices, vegetable broth, and drained black beans. Mix well and let simmer for about 20 minutes until sweet potatoes are tender.
  5. Add final touches & serve: Squeeze fresh lime juice over the chili before serving. Garnish with cilantro if desired.
