  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 can (4 oz) diced green chiles
  • 2 cans (15 oz each) hominy, drained
  • 1 medium sweet onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 tsp ground cumin
  • Juice of 1 lime
  • Fresh cilantro for garnish

Instructions

  1. Chop the onion and mince the garlic.
  2. Place whole chicken breasts in the crockpot along with chopped onion, minced garlic, diced green chiles, hominy, and ground cumin.
