  • 1 cup firm tofu, cubed
  • 1 cup cooked jasmine rice
  • 2 tablespoons low-sodium soy sauce
  • 1 teaspoon fresh ginger, minced
  • 2 tablespoons vegetable oil (canola or avocado oil)
  • 2 green onions, finely chopped
  • 1 tablespoon toasted sesame seeds

Instructions

  1. Gather and chop all ingredients to streamline cooking.
  2. Rinse rice under cold water until clear. Boil 2 cups of water in a pot, add rinsed rice, and cook according to package instructions until fluffy.
  3. Heat vegetable oil in a skillet over medium heat. Add cubed tofu and sauté until golden brown on all sides (about 8-10 minutes).
  4. Stir in minced ginger and soy sauce once the tofu is golden. Cook for another 3-4 minutes until fragrant.
  5. In serving bowls, layer cooked rice as the base, add sautéed tofu, top with sliced avocado and chopped green onions.
  6. Sprinkle toasted sesame seeds over each bowl before serving.
