  • 1 medium head cauliflower (about 4 cups, chopped)
  • 1 bulb garlic (roasted)
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream (or half-and-half)
  • 1 cup sharp cheddar cheese (grated)
  • 1 medium onion (finely chopped)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (chives or parsley, for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté the finely chopped onion until translucent.
  2. While the onion cooks, roast the garlic: slice off the top of the bulb, drizzle with olive oil, wrap in foil, and roast at 400°F (200°C) for about 30 minutes.
  3. Add chopped cauliflower and squeezed roasted garlic to the pot. Stir well to combine.
  4. Pour in vegetable broth until cauliflower is submerged. Bring to a simmer and cook for 15-20 minutes until tender.
  5. Blend the mixture until smooth using an immersion blender or regular blender.
  6. Return soup to low heat; stir in heavy cream and grated cheddar until melted.
