- 3–4 boneless, skinless chicken breasts
- 2 cups fresh or frozen sweet corn
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 4 cups low-sodium chicken broth
- 8 oz cream cheese, softened
- 2 medium Yukon gold potatoes, diced
- 1 tsp fresh thyme (or 1/2 tsp dried thyme)
- Salt and pepper to taste
- Optional: 6 slices crispy bacon bits
Instructions
- Prepare your ingredients by washing and dicing the potatoes and chopping the onions and garlic.
- Layer the chicken breasts at the bottom of the crockpot, followed by corn, potatoes, onions, garlic, and thyme.
- Pour chicken broth over the ingredients and add dollops of softened cream cheese on top without stirring.
- Season with salt and pepper according to taste.
- Cook on low for 6-8 hours or high for 3-4 hours until chicken shreds easily.
- In the last 30 minutes of cooking, shred the chicken directly in the pot and stir gently until creamy.
