Ingredients

  • 34 boneless, skinless chicken breasts
  • 2 cups fresh or frozen sweet corn
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 4 cups low-sodium chicken broth
  • 8 oz cream cheese, softened
  • 2 medium Yukon gold potatoes, diced
  • 1 tsp fresh thyme (or 1/2 tsp dried thyme)
  • Salt and pepper to taste
  • Optional: 6 slices crispy bacon bits

Instructions

  1. Prepare your ingredients by washing and dicing the potatoes and chopping the onions and garlic.
  2. Layer the chicken breasts at the bottom of the crockpot, followed by corn, potatoes, onions, garlic, and thyme.
  3. Pour chicken broth over the ingredients and add dollops of softened cream cheese on top without stirring.
  4. Season with salt and pepper according to taste.
  5. Cook on low for 6-8 hours or high for 3-4 hours until chicken shreds easily.
  6. In the last 30 minutes of cooking, shred the chicken directly in the pot and stir gently until creamy.
