Ingredients

Scale
  • 2 cups cubed ham
  • 4 cups thinly sliced russet or Yukon gold potatoes
  • 2 cups shredded sharp cheddar cheese
  • 1 small onion, chopped
  • 1 can (10.5 oz) cream of mushroom soup
  • ½ cup milk
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly spray a baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, sauté the chopped onion until translucent (about 3-4 minutes).
  3. In a large mixing bowl, combine the sautéed onions with cubed ham, sliced potatoes, cream of mushroom soup, and milk. Season with salt and pepper; stir until well combined.
  4. Fold in shredded cheddar cheese.
  5. Transfer the mixture into the prepared baking dish and cover with foil. Bake for about 45 minutes or until potatoes are tender. Remove foil during the last 15 minutes for a golden top.
