  • 1 cup iced cold water

  • ½ cup low-sodium soy sauce
  • 2 tbsp rice vinegar
  • Wasabi (optional)

Instructions

  1. Trim excess fat from chicken thighs and cut into uniform pieces.
  2. In a bowl, whisk together tempura batter mix and iced cold water until just combined; lumps are okay.
  3. Heat vegetable oil in a deep pan to 350°F (175°C).
  4. Dip each piece of chicken into the batter, allowing excess to drip off, then carefully place in hot oil.
