  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 ripe avocados
  • 4 large whole wheat tortillas
  • 2 cups mixed greens (baby spinach or arugula)
  • 1 cup cherry tomatoes (sliced)
  • ½ cup Greek yogurt or sour cream
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Heat a skillet over medium-high heat. Season chicken breasts with salt, pepper, cumin, and paprika.
  2. Cook chicken for about 6-7 minutes per side until golden brown and cooked through. Let it rest before slicing into thin strips.
