  • 4 boneless, skinless chicken breasts
  • 8 oz fresh cremini or button mushrooms, sliced
  • 3 cloves garlic, minced
  • 2 shallots, finely chopped
  • 1/2 cup Marsala wine (sweet or dry)
  • 1 cup low-sodium chicken broth
  • 2 tbsp olive oil
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by gathering them on the countertop.
  2. In a large skillet, heat olive oil and butter over medium heat. Sauté sliced mushrooms and chopped shallots until soft, about 5 minutes.
  3. Season chicken breasts with salt and pepper. Increase heat to medium-high and brown the chicken in the skillet for 5-7 minutes per side until golden.
  4. Remove chicken from skillet. Add minced garlic to drippings and sauté until fragrant, then pour in Marsala wine, scraping up brown bits from the pan.
  5. Stir in chicken broth and return chicken to the skillet. Simmer for about 10 minutes until the sauce thickens slightly.
  6. Serve Chicken Marsala over pasta or rice with extra sauce spooned on top.
