- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 4 cups mixed salad greens (romaine or spinach)
- 1 cup shredded carrots
- 2 cups thinly sliced red cabbage
- ½ cup fresh cilantro, chopped
- ¼ cup green onions, chopped
- ¼ cup low-sodium soy sauce
- 2 tbsp rice vinegar
- 2 tbsp sesame oil
- 1 tbsp honey or sugar
- Sriracha to taste (optional)
Instructions
- Poach chicken breasts in simmering salted water for 15-20 minutes until cooked. Allow to cool before shredding.
- While the chicken cools, chop the salad greens, carrots, red cabbage, cilantro, and green onions into uniform pieces.
- In a bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, and Sriracha until smooth.
- In a large mixing bowl, combine shredded chicken with salad greens, carrots, cabbage, cilantro, and green onions. Drizzle dressing over and toss gently.
- Serve in bowls or on a platter; garnish with extra cilantro or sesame seeds if desired.
