  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 4 cups mixed salad greens (romaine or spinach)
  • 1 cup shredded carrots
  • 2 cups thinly sliced red cabbage
  • ½ cup fresh cilantro, chopped
  • ¼ cup green onions, chopped
  • ¼ cup low-sodium soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp sesame oil
  • 1 tbsp honey or sugar
  • Sriracha to taste (optional)

Instructions

  1. Poach chicken breasts in simmering salted water for 15-20 minutes until cooked. Allow to cool before shredding.
  2. While the chicken cools, chop the salad greens, carrots, red cabbage, cilantro, and green onions into uniform pieces.
  3. In a bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, and Sriracha until smooth.
  4. In a large mixing bowl, combine shredded chicken with salad greens, carrots, cabbage, cilantro, and green onions. Drizzle dressing over and toss gently.
  5. Serve in bowls or on a platter; garnish with extra cilantro or sesame seeds if desired.
