  • 4 cups fresh spinach
  • 1 cup crumbled feta cheese
  • 3 garlic cloves, minced
  • 2 tbsp olive oil (plus extra for drizzling)
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, add 2 tbsp of olive oil and sauté minced garlic until fragrant. Add spinach and cook until wilted (about 2-3 minutes).
  3. In a bowl, combine the sautéed spinach with crumbled feta cheese and smoked paprika; mix well.
  4. Place each chicken breast between plastic wrap and pound to an even thickness of about 1/2-inch.
  5. Spoon the spinach-feta mixture onto each flattened chicken breast. Roll tightly from one end to the other and secure with toothpicks or kitchen twine.
  6. Arrange the rolled chicken in a baking dish, drizzle lightly with olive oil, and season with salt and pepper.
