  • 1 bunch fresh asparagus (about 1 pound)
  • 1 cup freshly shaved Parmesan cheese
  • 4 large eggs
  • 1 cup breadcrumbs (homemade or store-bought)
  • 2 tablespoons unsalted butter
  • 2 tablespoons freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

  1. Bring a pot of water to a gentle boil. Carefully add the eggs and cook for 6 minutes. Transfer them to an ice bath immediately.
  2. In a skillet over medium heat, melt butter until golden brown. Stir in breadcrumbs and toast until crispy, about 3-4 minutes.
  3. Snap off tough ends of asparagus and shave thinly using a vegetable peeler.
  4. Toss the shaved asparagus with lemon juice, salt, pepper, and half of the Parmesan in a large bowl.
  5. Slice open the soft-boiled eggs and place them on top of the asparagus mix. Sprinkle with remaining Parmesan and crunchy breadcrumbs before serving.
