- Salt and pepper to taste
Instructions
- Bring a pot of water to a gentle boil. Carefully add the eggs and cook for 6 minutes. Transfer them to an ice bath immediately.
- In a skillet over medium heat, melt butter until golden brown. Stir in breadcrumbs and toast until crispy, about 3-4 minutes.
- Snap off tough ends of asparagus and shave thinly using a vegetable peeler.
- Toss the shaved asparagus with lemon juice, salt, pepper, and half of the Parmesan in a large bowl.
