- 2 ripe avocados
- 1 cup fresh cilantro
- 2 limes (juiced)
- 4 garlic cloves (minced)
- 2 tbsp olive oil (plus more for roasting)
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Season chicken breasts with salt, pepper, cumin, and paprika.
- Dice sweet potatoes into cubes, toss in olive oil, salt, and pepper; spread on a baking sheet.
- Roast sweet potatoes for about 25 minutes until golden brown.
- While they roast, blend minced garlic, cilantro, lime juice, olive oil, salt, and pepper until smooth to create the mojo sauce.
- Add seasoned chicken to the oven alongside sweet potatoes; roast for 20-25 minutes until the internal temperature reaches 165°F (75°C).
- Once cooked, slice or shred chicken. In each bowl, layer roasted sweet potatoes, sliced avocado, chicken pieces, and drizzle generously with mojo sauce.
