  • 1 cup cucumber (diced)
  • 1 cup cherry tomatoes (halved)
  • 1/2 cup red onion (finely chopped)
  • 1/4 cup fresh herbs (parsley or cilantro, chopped)
  • Juice of 1 lemon
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cool water to remove bitterness.
  2. In a medium saucepan, combine rinsed quinoa and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes until liquid is absorbed.
  3. While quinoa cooks, heat olive oil in a skillet over medium heat. Sauté chopped bell peppers and onions for about 5 minutes until softened.
  4. Fluff the cooked quinoa with a fork and mix in sautéed veggies, diced cucumber, and halved cherry tomatoes.
  5. Drizzle with olive oil and lemon juice; add chopped herbs, salt, and pepper. Toss to combine.
  6. Serve immediately or store in an airtight container in the fridge for up to five days.
