  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium yellow onion, sliced
  • 4 garlic cloves, minced
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • Juice of 2 limes (about ¼ cup)
  • Tortillas (8 small flour or corn)
  • Fresh cilantro for garnish (optional)

Instructions

  1. Prepare your ingredients by slicing the bell peppers and onion into thin strips and mincing the garlic.
  2. Place chicken breasts in the slow cooker and season generously with chili powder, cumin, smoked paprika, salt, and pepper.
  3. Add the sliced bell peppers and onions over the chicken. Drizzle freshly squeezed lime juice on top.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is tender.
  5. Shred the chicken using two forks directly in the crockpot and stir to combine.
  6. Warm tortillas in a pan or microwave before serving. Serve with shredded chicken mixture and garnish with cilantro.
