  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 small red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup corn (fresh or canned)
  • 1 can (15 oz) black beans, rinsed and drained
  • 4 cups romaine lettuce or mixed greens, chopped
  • ½ cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tbsp extra virgin olive oil
  • 1 tsp cumin
  • 1 tsp chili powder

Instructions

  1. Preheat grill or skillet over medium-high heat. Season chicken breasts with salt, pepper, cumin, and chili powder.
  2. Grill or sear the chicken for about 6-7 minutes per side until golden brown and cooked through.
  3. Let the chicken rest for a few minutes before chopping it into bite-sized pieces.
  4. In a large bowl, combine red and yellow bell peppers, red onion, cherry tomatoes, corn, black beans, lettuce, and cilantro.
  5. Drizzle lime juice and olive oil over the veggies; toss gently. Add chopped chicken and mix well.
