  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn kernels (fresh or frozen)
  • ½ cup salsa
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1 cup crushed tortilla chips
  • 2 green onions, chopped

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, brown the ground beef over medium heat until no longer pink; drain excess fat.
  3. Stir in taco seasoning and ⅓ cup water; cook for 2-3 minutes.
  4. Mix in black beans and corn; heat through for about 3-4 minutes.
  5. In a baking dish, layer crushed tortilla chips, half of the beef mixture, salsa, and cheese. Repeat.
  6. Bake for 20 minutes until cheese is bubbly and golden.
