- 1/2 cup breadcrumbs (plain or Italian)
- 1 small onion, chopped
- 8 oz mushrooms, sliced (cremini or button)
- 1 cup sour cream
- 2 cups low-sodium beef broth
- 8 oz egg noodles
- 1 tsp garlic powder
- 1 tsp paprika (smoked preferred)
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Prepare the meatballs by mixing ground beef, breadcrumbs, chopped onion, garlic powder, salt, and pepper in a bowl. Shape into small balls (about two inches wide).
- Heat olive oil in a large skillet over medium heat. Cook meatballs in batches until browned on all sides (about 10 minutes). Remove and set aside.
- In the same skillet, add sliced mushrooms and sauté until golden brown (around 5 minutes).
- Pour in the beef broth and stir in sour cream and paprika; let simmer for about 5 minutes.
- Return meatballs to the skillet; cook on low heat for an additional 5 minutes to combine flavors.
- Cook egg noodles according to package instructions; drain well. Serve meatballs topped with sauce over noodles.
