  • 1 lb ground beef (80/20)
  • 1/2 cup breadcrumbs (plain or Italian)
  • 1 small onion, chopped
  • 8 oz mushrooms, sliced (cremini or button)
  • 1 cup sour cream
  • 2 cups low-sodium beef broth
  • 8 oz egg noodles
  • 1 tsp garlic powder
  • 1 tsp paprika (smoked preferred)
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Prepare the meatballs by mixing ground beef, breadcrumbs, chopped onion, garlic powder, salt, and pepper in a bowl. Shape into small balls (about two inches wide).
  2. Heat olive oil in a large skillet over medium heat. Cook meatballs in batches until browned on all sides (about 10 minutes). Remove and set aside.
  3. In the same skillet, add sliced mushrooms and sauté until golden brown (around 5 minutes).
  4. Pour in the beef broth and stir in sour cream and paprika; let simmer for about 5 minutes.
  5. Return meatballs to the skillet; cook on low heat for an additional 5 minutes to combine flavors.
  6. Cook egg noodles according to package instructions; drain well. Serve meatballs topped with sauce over noodles.
