  • 1 lb lean ground turkey
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 2 tbsp chili powder
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper (any color), chopped
  • 2 tbsp olive oil
  • Salt & pepper to taste
  • Fresh cilantro (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onions and sauté until softened (about 5 minutes). Stir in minced garlic until fragrant.
  2. Increase heat slightly and add ground turkey. Cook until browned, breaking apart with a wooden spoon (about 7 minutes).
  3. Add chopped bell pepper and black beans; cook for an additional 3-4 minutes.
  4. Pour in diced tomatoes along with their juices. Stir in chili powder, salt, and pepper.
  5. Reduce heat to low, cover the pot, and let simmer for at least 30 minutes to meld flavors.
  6. Taste before serving; adjust seasoning if necessary. Garnish with fresh cilantro if desired.
