  • 1 medium head green cabbage (approx. 1 pound)
  • 2 large carrots, sliced
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 (14 oz) can diced tomatoes
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt & black pepper to taste
  • 1 tbsp lemon juice (optional)

Instructions

  1. Wash and chop the cabbage into bite-sized pieces. Dice the onions and slice the carrots.
  2. In a large pot, heat 2 tbsp olive oil over medium heat. Add onions and sauté until translucent (about 5 minutes). Stir in minced garlic until fragrant.
  3. Add sliced carrots and cook for a couple of minutes before adding the chopped cabbage.
  4. Pour in vegetable broth and diced tomatoes (juice included). Bring to a gentle boil.
  5. Add thyme and bay leaf; reduce heat to low and simmer uncovered for 30-40 minutes until vegetables are tender.
  6. Remove bay leaf before serving; adjust seasoning with salt, pepper, or lemon juice if desired.
