- 2 medium butternut squashes (about 2 lbs total)
- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1/3 cup pure honey
- 2 tbsp fresh rosemary, chopped
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Halve the butternut squashes lengthwise and scoop out seeds. Drizzle with olive oil and season with salt and pepper.
- Place squash cut side down on a parchment-lined baking sheet and roast for 30-40 minutes until tender.
- While roasting, heat olive oil in a pan over medium heat. Season chicken breasts with salt and pepper, cooking for 6-8 minutes per side until golden brown and cooked through.
- Shred or dice the cooked chicken and mix it with honey, chopped rosemary, salt, and pepper.
- Flip roasted squash cut side up, fill each half with the chicken mixture, and return to the oven for an additional 10-15 minutes.
