  • 1 cup whole milk
  • 1 1/2 cups fresh mixed berries (strawberries, blueberries, raspberries)
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a mixing bowl, whisk together flour, baking powder, sugar, and salt until combined.
  3. In another bowl, cream softened butter and sugar for about 3-5 minutes until light and fluffy.
  4. Beat in eggs one at a time until fully incorporated.
  5. Mix milk and vanilla into the butter-sugar mixture until smooth.
  6. Gradually add dry ingredients to wet ingredients, folding gently to avoid overmixing.
  7. Fold in fresh berries until evenly distributed.
  8. Pour batter into the prepared cake pan and bake for 25-30 minutes or until golden brown and a toothpick comes out clean.
  9. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
