Description

Blueberry Swirl Cheesecake is a luscious dessert that harmoniously blends creamy cheesecake with vibrant blueberry swirls.   • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 24 oz cream cheese, softened
  • 1 cup sour cream
  • 2 cups fresh blueberries
  • 2 tsp vanilla extract
  • 3 large eggs

Instructions

  1. Preheat oven to 325°F (160°C). Grease a springform pan.
  2. In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press into the bottom of the prepared pan.
  3. Cook blueberries with 1 tbsp sugar in a saucepan over medium heat until syrupy (5-7 minutes). Let cool slightly.
  4. In a large bowl, beat cream cheese until smooth. Gradually add sugar, then mix in sour cream and vanilla.
  5. Add eggs one at a time on low speed until just combined.
  6. Pour half of the filling into the crust, drizzle with blueberry sauce, then add remaining filling and swirl gently.
  7. Bake for 55-60 minutes until edges are set but center jiggles slightly. Turn off the oven and leave the cheesecake inside for an hour.
  8. Cool completely before refrigerating for at least 4 hours or overnight.
