- ½ cup unsalted butter, melted
- ¾ cup granulated sugar
- 24 oz cream cheese, softened
- 1 cup sour cream
- 2 cups fresh blueberries
- 2 tsp vanilla extract
- 3 large eggs
Instructions
- Preheat oven to 325°F (160°C). Grease a springform pan.
- In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press into the bottom of the prepared pan.
- Cook blueberries with 1 tbsp sugar in a saucepan over medium heat until syrupy (5-7 minutes). Let cool slightly.
- In a large bowl, beat cream cheese until smooth. Gradually add sugar, then mix in sour cream and vanilla.
- Add eggs one at a time on low speed until just combined.
- Pour half of the filling into the crust, drizzle with blueberry sauce, then add remaining filling and swirl gently.
- Bake for 55-60 minutes until edges are set but center jiggles slightly. Turn off the oven and leave the cheesecake inside for an hour.
- Cool completely before refrigerating for at least 4 hours or overnight.
