  • 8 oz Boursin cheese (garlic & herb recommended)
  • 2 tbsp olive oil
  • 4 cups fresh spinach
  • 1 cup cherry tomatoes, halved
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pat dry the chicken breasts and season generously with salt and pepper.
  3. In an oven-safe skillet, heat olive oil over medium-high heat. Sear the chicken for about 5 minutes on each side until golden brown.
  4. Reduce heat and place dollops of Boursin cheese on top of each chicken breast, allowing it to melt slightly.
