  • 1 cup unsalted roasted cashews
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 3 green onions, thinly sliced
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp honey
  • 1 tbsp fresh ginger, minced
  • 2 tbsp cornstarch
  • 2 tbsp vegetable oil (for frying)
  • ½ cup low-sodium chicken broth
  • 1 tsp sesame oil

Instructions

  1. Cut the chicken breasts into bite-sized pieces and set aside.
  2. In a bowl, combine soy sauce, honey, ginger, and cornstarch to create a marinade. Add the chicken to the marinade and mix well.
  3. Heat vegetable oil in a large skillet over medium-high heat. Sauté marinated chicken until golden brown (about 5-7 minutes).
  4. Add bell peppers and cashews; stir-fry for an additional 3-4 minutes until veggies are slightly softened.
