- 2 large eggs
- 1/2 cup all-purpose flour
- 4 green onions, finely chopped
- Salt and pepper to taste
- 1/4 cup vegetable oil for frying
Instructions
- 1. Peel and grate the potatoes; rinse under cold water to remove excess starch.
- 2. In a skillet over medium heat, sauté diced chicken seasoned with salt and pepper until cooked through (7-10 minutes). Let cool slightly.
- 3. In a bowl, mix grated potatoes, shredded mozzarella, cooked chicken, chopped green onions, eggs, flour, salt, and pepper until combined.
- 4. Heat vegetable oil in a skillet over medium-high heat. Spoon about 1/4 cup of batter onto the skillet and flatten slightly. Cook for 3-4 minutes per side until golden brown. Repeat with remaining batter.
- 5. Drain on paper towels and serve hot with your favorite dipping sauce.
