  • 3 medium Russet potatoes (about 2 lbs), peeled and grated
  • 4 boneless, skinless chicken breasts (approx. 1 lb), cooked and diced
  • 1 cup shredded mozzarella cheese
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 4 green onions, finely chopped
  • Salt and pepper to taste
  • 1/4 cup vegetable oil for frying

Instructions

  1. 1. Peel and grate the potatoes; rinse under cold water to remove excess starch.
  2. 2. In a skillet over medium heat, sauté diced chicken seasoned with salt and pepper until cooked through (7-10 minutes). Let cool slightly.
  3. 3. In a bowl, mix grated potatoes, shredded mozzarella, cooked chicken, chopped green onions, eggs, flour, salt, and pepper until combined.
  4. 4. Heat vegetable oil in a skillet over medium-high heat. Spoon about 1/4 cup of batter onto the skillet and flatten slightly. Cook for 3-4 minutes per side until golden brown. Repeat with remaining batter.
  5. 5. Drain on paper towels and serve hot with your favorite dipping sauce.
