  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 ripe avocados
  • 4 thick slices sourdough bread
  • 1 cup sharp cheddar cheese, shredded
  • 2 cups fresh spinach
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season chicken breasts with salt and pepper. In a skillet over medium heat, add olive oil and cook chicken for 5-7 minutes on each side until browned and internal temperature reaches 165°F (75°C). Remove from heat.
  3. Mash avocados in a bowl until creamy but chunky. Season with salt or lime juice if desired.
  4. On one slice of sourdough, layer sliced chicken, mashed avocado, spinach, and cheddar cheese. Top with another slice of bread.
  5. In the same skillet, add a bit of butter or olive oil and grill sandwiches for about 3-4 minutes per side until golden brown and cheese is melted.
