- 8 oz rotini or penne pasta
- 1 cup cherry tomatoes, halved
- 1 medium cucumber, diced
- 1 cup bell peppers (mixed colors), chopped
- ½ medium red onion, thinly sliced
- 1 cup plain Greek yogurt
- Juice of 1 lemon (about 3 tbsp)
- 2 tbsp fresh dill, chopped
- Salt and pepper to taste
Instructions
- Preheat grill or stovetop pan over medium heat. Season chicken breasts with salt and pepper. Grill for about 6-7 minutes per side until cooked through; let rest and slice.
- Boil salted water in a pot; cook pasta according to package instructions until al dente (8-10 minutes). Drain and rinse under cold water.
- While pasta cooks, dice cucumber, cherry tomatoes, bell peppers, and red onion. In a bowl, whisk Greek yogurt, lemon juice, dill, salt, and pepper until smooth.
- In a large bowl, combine cooled pasta with veggies and sliced chicken. Fold in the yogurt dressing until well mixed.
- Chill in the fridge for at least 30 minutes before serving to enhance flavors.
