  • 2 boneless, skinless chicken breasts (about 1 lb)
  • 4 cups romaine lettuce, chopped
  • 1 cup shredded carrots (about 2 large carrots)
  • 1 cup red cabbage, thinly sliced
  • 4 green onions, chopped
  • ½ cup toasted almonds
  • 3 tbsp sesame oil
  • 2 tbsp rice vinegar
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp honey

Instructions

  1. Preheat grill or skillet over medium heat. Season chicken breasts with salt and pepper. Cook for about 6–7 minutes per side until fully cooked. Allow to cool before slicing thinly.
  2. While the chicken cooks, chop the romaine lettuce and shred the red cabbage and carrots.
  3. In a small bowl, whisk together sesame oil, rice vinegar, soy sauce, and honey until well combined.
  4. In a large bowl, combine chopped veggies and sliced chicken. Drizzle the dressing over the top and toss well.
  5. Sprinkle toasted almonds just before serving for added crunch.
