- 2 boneless, skinless chicken breasts (about 1 lb)
- 4 cups romaine lettuce, chopped
- 1 cup shredded carrots (about 2 large carrots)
- 1 cup red cabbage, thinly sliced
- 4 green onions, chopped
- ½ cup toasted almonds
- 3 tbsp sesame oil
- 2 tbsp rice vinegar
- 2 tbsp low-sodium soy sauce
- 1 tbsp honey
Instructions
- Preheat grill or skillet over medium heat. Season chicken breasts with salt and pepper. Cook for about 6–7 minutes per side until fully cooked. Allow to cool before slicing thinly.
- While the chicken cooks, chop the romaine lettuce and shred the red cabbage and carrots.
- In a small bowl, whisk together sesame oil, rice vinegar, soy sauce, and honey until well combined.
- In a large bowl, combine chopped veggies and sliced chicken. Drizzle the dressing over the top and toss well.
- Sprinkle toasted almonds just before serving for added crunch.
