  • 1 ½ cups granulated sugar
  • 3 large eggs
  • 1 cup buttermilk
  • ½ cup unsalted butter (softened)
  • 1 cup fresh raspberries (plus extra for topping)
  • 2 cups powdered sugar (for frosting)
  • 8 oz cream cheese (softened)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line two 9-inch round baking pans with parchment paper.
  2. In a large bowl, whisk together flour, cocoa powder, baking powder, and salt until combined.
  3. In another bowl, cream together softened butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
  4. Slowly add buttermilk to the mixture, followed by gently folding in the dry ingredients until just combined.
  5. Carefully fold in half of the raspberries into the batter. Pour evenly into prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  6. Allow cakes to cool completely before frosting with cream cheese mixed with powdered sugar. Top with remaining raspberries.
