Instructions
- Wash and peel the Yukon Gold potatoes; cut them into even cubes.
- Boil potatoes in salted water until fork-tender, about 15 minutes; drain and set aside.
- Heat butter in a skillet over medium heat. Season cod with salt and pepper, then sear for 3-4 minutes on each side until golden brown.
- In the same skillet, add minced garlic and chopped rosemary; cook for about 1 minute until fragrant.
- Stir in heavy cream and let simmer gently for a few minutes.
- Add cooked potatoes and lemon juice to the sauce; mix well before returning cod fillets to the skillet.
