  • 2 fresh cod fillets (about 6 oz each)
  • 2 medium Yukon Gold potatoes, cubed
  • 1 cup heavy cream
  • 3 sprigs fresh rosemary, chopped
  • 2 tbsp unsalted butter
  • Juice of 1 lemon
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Wash and peel the Yukon Gold potatoes; cut them into even cubes.
  2. Boil potatoes in salted water until fork-tender, about 15 minutes; drain and set aside.
  3. Heat butter in a skillet over medium heat. Season cod with salt and pepper, then sear for 3-4 minutes on each side until golden brown.
  4. In the same skillet, add minced garlic and chopped rosemary; cook for about 1 minute until fragrant.
  5. Stir in heavy cream and let simmer gently for a few minutes.
  6. Add cooked potatoes and lemon juice to the sauce; mix well before returning cod fillets to the skillet.
