  • 2 cups fresh spinach, chopped
  • ½ cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • ½ cup heavy cream
  • ½ cup breadcrumbs (preferably panko)
  • 1 large egg, whisked
  • 1 small onion, finely chopped
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). In a large bowl, mix ground turkey, breadcrumbs, egg, garlic, onion, salt, pepper, and Italian seasoning until just combined.
  2. In a skillet over medium heat, sauté spinach in olive oil until wilted. Allow to cool before adding to the meatball mixture.
  3. Shape the mixture into golf ball-sized meatballs and place on a baking sheet lined with parchment paper.
  4. Bake meatballs for 25 minutes or until they reach an internal temperature of 165°F (74°C).
  5. In the same skillet used for spinach, combine heavy cream and Parmesan over low heat until smooth. Add baked meatballs and simmer for an additional 5 minutes.
