- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup orzo pasta
- 1 cup heavy cream
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 2 tsp dried Italian herbs (basil, oregano, thyme)
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper and sauté until golden brown and cooked through (6-7 minutes per side). Remove from skillet and set aside.
- Lower heat slightly, add minced garlic and sun-dried tomatoes to the skillet; cook for about 1 minute until fragrant.
- Stir in chicken broth and heavy cream; scrape any bits from the bottom of the pan.
- Add uncooked orzo to the sauce mixture, simmer gently for 10-12 minutes until al dente.
- Fold in fresh spinach until wilted and mix in grated parmesan cheese.
- Slice the cooked chicken and serve over the creamy orzo mixture.
