  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1 inch fresh ginger, grated
  • 1 (15 oz) can tomato sauce
  • 1 (13.5 oz) can full-fat coconut milk
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 2 tsp garam masala
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Dice the chicken into bite-sized pieces and mince the garlic and ginger.
  2. In the crockpot, combine diced chicken, minced garlic and ginger, tomato sauce, coconut milk, cumin, coriander, garam masala, salt, and pepper. Stir well.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is tender.
  4. About 30 minutes before serving, shred the chicken slightly with two forks for enhanced flavor absorption.
  5. Add chopped cilantro just before serving, stirring gently.
  6. Serve over basmati rice or with naan.
