- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 1 inch fresh ginger, grated
- 1 (15 oz) can tomato sauce
- 1 (13.5 oz) can full-fat coconut milk
- 2 tsp ground cumin
- 2 tsp ground coriander
- 2 tsp garam masala
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Dice the chicken into bite-sized pieces and mince the garlic and ginger.
- In the crockpot, combine diced chicken, minced garlic and ginger, tomato sauce, coconut milk, cumin, coriander, garam masala, salt, and pepper. Stir well.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is tender.
- About 30 minutes before serving, shred the chicken slightly with two forks for enhanced flavor absorption.
- Add chopped cilantro just before serving, stirring gently.
