Ingredients
- 1 lb sweet potatoes, peeled and diced
- 2 (15 oz) cans black beans, drained and rinsed
- 1 (14.5 oz) can fire-roasted diced tomatoes
- 1 medium yellow onion, chopped
- 3 cloves garlic, minced
- 2 cups low-sodium vegetable broth
- 3 tbsp chili powder (adjust to taste)
- 1 tsp ground cumin
- 1 tbsp olive oil
- 1 cup bell peppers, chopped (red or green)
- Juice of 1 lime
- Fresh cilantro (optional)
Instructions
- Heat olive oil in a skillet over medium heat. Sauté onions and garlic until softened.
- In a crockpot, combine sautéed onions and garlic with sweet potatoes, black beans, diced tomatoes, bell peppers, and vegetable broth.
- Add chili powder and cumin; stir well to combine all ingredients.
- Cover the crockpot and cook on low for 6-8 hours or high for 3-4 hours.
- Just before serving, stir in fresh lime juice.
