  • 1 medium cauliflower head (about 4 cups riced)
  • 1 cup shredded mozzarella cheese
  • 1 large egg
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup tomato sauce
  • 1 cup assorted vegetables (bell peppers, mushrooms, spinach)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Rice the cauliflower using a food processor until fine.
  3. Steam the riced cauliflower for 5 minutes; cool and squeeze out excess moisture.
  4. In a bowl, mix riced cauliflower, egg, mozzarella cheese, Italian seasoning, salt, and pepper until combined.
  5. Spread the mixture onto a parchment-lined baking sheet into desired pizza shape; bake for 25-30 minutes until golden brown.
  6. Remove from oven, add tomato sauce, sprinkle with remaining cheese and toppings; bake for an additional 10-15 minutes until cheese is bubbly.
