Instructions

  1. Preheat oven to 450°F (232°C).
  2. In a large bowl, combine warm water, yeast, and brown sugar; let foam for about 5 minutes.
  3. Gradually mix in flour until well combined and knead on a floured surface for 8-10 minutes until smooth.
  4. Place dough in a greased bowl, cover with a cloth, and let rise in a warm spot until doubled (about 1 hour).
  5. Boil 4 cups of water with baking soda to create a sodium bath.
  6. Divide the risen dough into 8 pieces. Shape each piece into pretzels.
  7. Dip each pretzel into the boiling solution briefly, then place on parchment-lined sheets.
  8. Sprinkle with coarse sea salt and bake for 12–15 minutes until golden brown.
  9. Brush with melted butter before serving.
