- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C).
- In a skillet over medium heat, add olive oil and sauté chopped onion until translucent. Add minced garlic and cook for another minute.
- Stir in sliced zucchini, cooking until slightly softened (about 5 minutes).
- In a large bowl, combine sautéed veggies with beaten eggs, cheddar cheese, salt, pepper, and breadcrumbs; mix well.
