  • 4 cups sliced zucchini (approx. 3 medium zucchinis)
  • 1 cup chopped onion (about 1 medium onion)
  • 2 cloves garlic, minced
  • 3 large eggs
  • 1 cup shredded cheddar cheese
  • 1 cup breadcrumbs
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet over medium heat, add olive oil and sauté chopped onion until translucent. Add minced garlic and cook for another minute.
  3. Stir in sliced zucchini, cooking until slightly softened (about 5 minutes).
  4. In a large bowl, combine sautéed veggies with beaten eggs, cheddar cheese, salt, pepper, and breadcrumbs; mix well.
  5. Pour mixture into a greased baking dish and spread evenly. Optionally sprinkle more cheese or breadcrumbs on top.
  6. Bake for 30-35 minutes until golden brown and bubbly.
