  • 8 oz rotini pasta
  • 1 cup Kalamata olives (pitted and halved)
  • 1 cup cherry tomatoes (halved)
  • 1 medium cucumber (diced)
  • 1/2 red onion (thinly sliced)
  • 4 oz feta cheese (crumbled)
  • 1/4 cup fresh parsley (chopped)
  • 1/4 cup fresh basil (chopped)
  • 1/3 cup extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted boiling water until al dente, about 8-10 minutes. Drain and let cool.
  2. While the pasta cooks, prepare the vegetables: chop cucumbers, slice cherry tomatoes in half, and thinly slice red onion.
  3. In a large bowl, combine cooled pasta with olives, cherry tomatoes, cucumber, red onion, and crumbled feta.
  4. Add chopped parsley and basil to the mixture.
  5. Whisk together olive oil and balsamic vinegar; drizzle over the salad and toss gently.
  6. Season with salt and pepper to taste. Serve immediately or refrigerate briefly for flavors to meld.
