  • 8 sheets phyllo dough
  • 2 cups shredded cooked chicken breast
  • 1 cup plain Greek yogurt
  • ½ cup diced celery
  • ½ cup chopped fresh herbs (dill or parsley)
  • 1 cup sliced red grapes
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Olive oil (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lay out the phyllo dough sheets and brush lightly with melted butter or olive oil. Cut into squares to fit muffin tins.
  3. Press each square into greased muffin tins.
