  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 3 cloves fresh garlic, minced
  • 1/2 cup fresh lemon juice (about 2 large lemons)
  • 1 cup low-sodium chicken broth
  • 2 tbsp capers, rinsed
  • 1/4 cup fresh parsley, chopped
  • 4 tbsp butter
  • 2 tbsp olive oil

Instructions

  1. Pound the chicken breasts to an even thickness between plastic wrap.
  2. Dredge each piece in seasoned flour (salt and pepper) until fully coated.
  3. In a skillet over medium heat, heat olive oil and 2 tablespoons of butter. Cook the chicken for about 4-5 minutes per side until golden brown; remove from skillet.
  4. Add minced garlic to the skillet and sauté briefly until fragrant. Deglaze the pan with chicken broth.
  5. Stir in lemon juice and capers, scraping up browned bits; return the chicken to the skillet for another 2 minutes to soak in the flavors.
  6. Garnish with fresh parsley before serving.
